Butter paddles are used to work buttermilk out of freshly churned butter. At the same time, salt may be worked into the butter. The butter is constantly worked, holding the paddle in one hand and a butter spade in the other. Once the butter is ready, it is placed in a mold and sometimes decorated using a butter stamp.
