The "orange peel" glaze on this storage jar is made by adding salt to the kiln. Foods were preserved by smoking, salting or adding brandy or sugar. Meat (especially pork), fruits and vegetables were also preserved. Foods that were "pickled" could not be stored in salt glazed jars. Canning increased in popularity during the Civil War and was particularly effective for the Union Army who had better sources of preserved foods.
