Meat was normally roasted in an oven like this one. The spit held the meat directly over the flames and the metal oven allowed the heat to be trapped and fully cook the meat. Turning the meat on the spit helped to distribute the heat evenly. Fish, fowl and fruit could also be roasted over the fire.
